Many of us celebrate this day and dress up in green with good luck charms, but do we really know why?

Being so close to Ireland (I live in Scotland) I was curious to know a bit more. Saint Patrick was the patron saint and national apostle of Ireland who is credited with bringing christianity to Ireland. It is said that Saint Patrick died at Saul, Downpatrick, Ireland, on March 17, 460 A.D.
Estando tan cerca de Irlanda (yo vivo en Escocia) estaba curiosa de aprender un poco mas sobre esto. San Patricio era el apóstol de Irlanda, a el se le acredita llevar el cristianismo a Irlanda. Dicen que San Patricio murió en Saul, Irlanda el 17 de Marzo, 460 A.D.

Tortilla Soup/ Sopa de Tortilla!

I want to share this recipe for tortilla soup because it’s one of the traditional soups you will find anywhere in Mexico and it’s one of my absolute favorite things to order. I still haven’t been to any place here in the US that serves the authentic one…it’s always some sort of TexMex version that has a completely different flavor and always has chicken. Mexican tortilla soup has no chicken in it….only the stock. So I had to find a good recipe to indulge my cravings of it. I found this recipe here . The chef shares recipes all the time on there…there’s just one catch…. they’re only in Spanish.
I hope you enjoy this recipe as much as I do.

Quiero compartir esta receta para sopa de tortilla porque es una de las sopas tradicionals que se van a encontrar en Mexico y porque es una de mis favoritas!! Todavia no he encontrado ningun lugar aqui en EUA que sirva la autentica….siempre es algun tipo the version TexMex que tiene un sabor completamente diferente y que siempre tiene pollo. La sopa de tortilla Mexicana no usa pollo…solo el caldo. Asi que tuve que encontrar una receta para esos momentos de antojo! Encontre esta receta aqui . El chef siempre comparte sus recetas…pero solo en español.
Espero disfruten de ella igualmente.


TORTILLA SOUP
Ingredients: 2 ½ cups of chicken stock 3 or 4 med tomatoes 1 small onion 2 small garlic cloves 1 tbsp of epazote leaves (this is an herb that is exceedingly used in central Mexico, but it might be hard to find in another country) instead you can use parsley or cilantro in the same quantity Panela cheese or any soft/bland flavored cheese to taste (fresh mozzarella is a good option) Sour cream or Mexican cream to taste 1 avocado Dried chiles to taste ( preferably Pasilla chiles …if not any kind) 15 tortillas Vegetable oil to fry Salt and pepper (fresh is better) to taste


SOPA DE TORTILLA

Ingredientes:
2/3 de litro de caldo de pollo.
3 ó 4 jitomates medianos. ( tomates rojos )
1 cebolla pequeña.
2 dientes de ajo pequeños.
1 cucharada de hojas de epazote (este es una hierva sumamente usada en la zona central de México, pero quizá resulte difícil conseguirla en otro país) en su defecto se puede usar perejil o cilantro en la misma cantidad.
Queso panela o de sabor suave al gusto.
Crema, al gusto.
1 aguacate. ( Palta )
Chiles ( aji ) secos al gusto (preferiblemente chile “pasilla” , si no puede ser cualquier).
15 tortillas.
Aceite vegetal para freír.
Sal y pimienta, si ésta es fresca el resultado será mejor al gusto.

Preparation/ Preparación

Boil tomatoes for a couple of minutes. Before they completely cook, take them out of the water and blend with onion and garlic. In a pan heat up a little oil and once it’s hot pour in the tomato blend.
Se cuecen los jitomates ( tomates rojos ) un par de minutos en agua hirviendo. Antes de que estén completamente cocidos se sacan del agua y se muelen junto con la cebolla y el ajo. En un cazo se calienta poco aceite, ya que éste se encuentre bien caliente se agrega la mezcla molida de jitomate.

Once it changes color and looses the raw tomato flavor add the chicken stock. When it starts boiling add the salt and pepper and the epazote (or the parsley or cilantro).

Cuando la mezcla de jitomate ha cambiado de color y ha perdido su sabor de crudo, se le agrega el caldo de pollo. Cuando éste empiece a hervir se le agrega el epazote, sal y pimienta al gusto.


Begin cutting the tortillas in thin rectangles and fry them. Once they get a light brown color they are done. Take out and set aside on paper towels to let the oil drain off.
Aparte se cortan las tortillas en tiras largas y delgadas, y se fríen. Cuando han adquirido un color café ligeramente oscuro, sin que se quemen, se sacan del aceite y se escurren.

In the same oil from the tortillas you can fry the chiles (the smell when you fry them will be very spicy). Be very careful you don’t burn the chiles because they will get a very unpleasant flavor. Their color should change to brown NOT black.
En el mismo aceite que se frieron las tortillas se pueden pasar los chiles ( aji )secos (el olor del chile al freírse suele ser picante), debe tener mucho cuidado en que los chiles no se quemen, su color debe cambiar a café no a negro, porque si se queman adquieren un sabor amargo muy desagradable.

Cut avocado and cheese in small squares.
El aguacate ( palta ) se corta en pequeños cuadritos, lo mismo que el queso.

To serve the broth should be hot and right before you place on table you add a portion of the fried tortillas and a helping of cheese, avocado and cream. You can place the fried chiles on the table so people can help themselves as they wish and same with the remainder of the other ingredients.
Para servirse el caldo tiene que estar bien caliente y unos instantes antes de llevarlo a la mesa se agrega en cada plato hondo una porción de tortillas fritas, una cucharada de queso, aguacate y crema. En la mesa se puede poner el chile frito, cada comensal podrá usarlo al gusto.

NOTE: it’s important that you don’t leave the tortillas in the broth for too long before you serve otherwise they will be completely sogy.
Nota: Es importante que las tortillas no estén mucho tiempo en el caldo antes de servirse porque se remojarán y no será muy agradable la textura, la cual debe ser crujiente.
